total 11 Blocks of ore

For Obtain 3 Blocks of ore - Block of Coal, Block of Copper are early game obtainable, Block of Emerald / Block of Redstone are also obtainable if village
For Obtain 5 Blocks of ore - Block of Gold & Block of Quartz are easily obtainable in nehter
For Obtain 7 Blocks of ore - Caving.

the best definition I can think of is only blocks that can be converted back to their raw materials and you get them from ores

the wiki doesn't have a page for this but the old wiki lists bone block, dried kelp block, hay bale, slime block, honey block, and clay

Bone haybale slime honey kelp should not be included in this goal, amethyst should be, and copper block should be the only copper block that counts

I guess all the copper variants could be excluded anyway because only one is craftable from ingots
